History

Following in the footsteps of the ancient Companies of master salt-makers of the 12th century, and gathered on a site of particular importance for salt production since time immemorial - Aigues-Mortes; the Sea Salt Brotherhood carries this torch of tradition which - quite apart from all commercial interests - continues to evoke one of the most essential products in the life of men and to extol its gastronomic virtues. Salt is also a product with great spiritual and universally-symbolic significance.


Rituals

The Franc Salé :
The presentation of the ‘franc salé’ (salt franc) commemorates the timeless privilege of the inhabitants of Aigues-Mortes to take as much salt from the Salins du Peccais as needed for their own use, without payment. This privilege was confirmed by King Francis I and survived the revolutionary laws.
Since the beginning of the 20th century, this custom has taken the form of a sum of money paid by the owners of the salt marshes to the town of Aigues-Mortes.
In this way, the link between salt and the rights of the inhabitants of this noble city is maintained.

Baptism Salt :
LWhen the Christian church baptises its children, it places holy salt on their lips to symbolise wisdom, which is at the origin of every new birth. When the Brotherhood holds its grand meeting, it presents the priest of Aigues-Mortes with enough salt to baptise the town’s children during the year ahead.


The Seven Commandments :
1. I will never underestimate salt, which is an element of life
2. I will respectfully add salt to my food, which has no meaning without it
3. I will never forget that salt helps prevent corruptibility
4. I will never forget that salt is equally a symbol of wisdom and of flavour
5. I will contemplate the sea, the sun and the wind: salt’s creators
6. I will share salt as a symbol of everlasting friendship
7. I will never become insipid

The Processions : 
The processions are led by the mace-bearer dressed in a yellow tabard, which is adorned with heraldic bearings on both sides. The wooden mace has a large pine cone on top of it. The Grand Master holds a wooden sceptre in his right hand which is topped with a flame, symbol of the Holy Spirit. The standard carried on a wooden and silver handle is made from velvet. On one side, the Brotherhood coat of arms is displayed and, on the other, the embroidered motif of the medallion.

Symbolism of the Medallion

Bronze, circular medallion - set in olive-wood with a salt-filled pyramid at its centre- has a semicircle engraved above it, symbolising the rising sun, and 3 waves beneath it, evoking the sea.
 

Coat of Arms, Costumes or Dignitaries’ Dress
 


Heraldry:
“silver surface with azure blue waves, from which rise three cannon flames”
The salt is evoked through silver, the water through the blue waves, and the Holy Spirit through the red flames.
Motto :
“Nunquam evanescere” (never become insipid)

Dignitaries’ Dress :
The chevaliers wear an azure blue mantle, with a white lining, opened and pinned to the right shoulder and rolled up on the left arm. The hat is made from black felt modelled on a 15th century style.

The medallion is worn over the mantle, hanging on a large, gilded bronze chain, made up of 10 towers evoking those of the city of Aigues-Mortes, alternated with the Languedoc Cross.

The Sea’s White Gold: Salt

Since ancient times, sea salt has been produced and harvested on the naturally preserved salt beds of the Camargue. The salt-makers, genuine farmers of the sea, produce salt of very high quality. The purity and whiteness of the crystals - combined with their gustatory virtues - make this sea salt so much more than a mere foodstuff, which brings all the goodness of the sea to our table.

More than all this, the very activity of sea salt extraction has been confirmed as one of the surest ways to encourage the preservation of our environment.
